All our products are made without preservatives and using traditional methods, just like in the past. This allows us to achieve a more delicious, natural result with a unique, non-standardized shape. By combining production with state-of-the-art equipment, we ensure consistent quality and proper packaging of our products.
Furthermore, we apply HACCP principles and implement a Quality and Food Safety Management System in compliance with international standards ISO 9001 & ISO 22000 to guarantee the highest safety and quality standards in our food production.
The production process is completed in six stages: fermentation, weighing & cutting, resting, processing, baking, and packaging.
At each stage, we incorporate both modern technologies and traditional techniques to achieve the best possible results. Our doughs contain a low percentage of yeast and undergo a slow resting process in the proofing chamber. This allows the flour’s enzymes to work more effectively, resulting in a delicious and easily digestible product.
To ensure the safety, quality, and consistency of every product, our experienced staff conducts continuous visual and quality inspections at every stage of the production process.
Additionally, periodic quality checks are carried out on finished products to certify their high standards and guarantee their excellence.
At our bakery, raw materials are the most important factor, as without them, a high-quality product cannot exist.
We carefully select our raw materials and conduct thorough technical analyses to ensure their quality. Our products contain Greek flours, low amounts of salt and yeast, and no added colorants or flavor enhancers.
As a result, all our products retain their natural flavor, which is highlighted by the superior quality of the raw materials and the meticulous processing methods we apply.
